INGREDIENTS:
FOR THE CAKE
⅔ cup unsweetened, unflavored plant milk
½ tablespoon apple cider vinegar
½ tablespoon ground flaxseed
6 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
¾ cup whole-wheat pastry flour
¼ cup almond flour
2 tablespoons pure cocoa powder
½ teaspoon baking powder
½ teaspoon baking soda
⅛ teaspoon sea salt
FOR THE ICE CREAM
2 bananas, cut into 2-inch pieces and frozen for at least 4 to 6 hours
1⅓ (10 ounce) bag frozen strawberries (about 2 cups)
1 tablespoon almond butter
1 tablespoon maple syrup (optional)
¼ cup chocolate chips (1 teaspoon per cupcake)
DIRECTIONS:
-Preheat the oven to 350°F. Place a silicone cupcake mold on a baking sheet.
-Make the cake: In a medium bowl, whisk together the milk, vinegar, and ground flaxseed. Let stand for 10 minutes.
-Whisk in the maple syrup and vanilla. Set aside.
-In a large bowl, whisk together the flours, cocoa powder, baking powder, baking soda, and salt until well blended.
-Add the liquid ingredients to the dry mixture and mix well.
-Pour 2 tablespoons of the batter into each cupcake mold. Bake until a toothpick inserted in the middle of the cupcake comes out dry, 40 to 45 minutes.
-Cool the cupcakes completely in the mold for 10 to 15 minutes.
-Meanwhile, prepare the ice cream: Peel and cut bananas. Spread out in a flat, freezer-safe container and freeze until firm, at least 4 to 6 hours.
-In a blender, combine bananas, strawberries, almond butter, and maple syrup (if using). Blend into a smooth consistency. Transfer the ice cream to a container and freeze until the cupcakes are completely cool.
-Scoop the mixture on top of the cakes, filling ¾ full. Flatten it with a spatula. Cover with plastic wrap and freeze for at least 3 to 4 hours for the ice cream to set.
-When ready to serve, remove the cakes from the mold and place on individual plates; let stand for 10 to 12 minutes. Sprinkle each cupcake with 1 teaspoon of chocolate chips (if using). Serve immediately.

Faithkeepers is Clarion’s documentary film about the violent persecution and genocide of Christians and other minorities in the Middle East.
The film features exclusive footage and testimonials of Christians, Baha’i, Yazidis, Jews, and other minority refugees, and a historical context of the persecution in the region.
Released in the Spring of 2016, the film also follows the story of a 24-year-old Christian student from North Carolina on her journey of understanding, discovery and solidarity with persecuted brothers and sisters in the Middle East.

INGREDIENTS:
1 large sweet potato
1 cup brown rice, cooked
8 ounces vegetarian, no added oil, re-fried beans
1 cup of salsa
1 cup fresh spinach
8 ounces black beans, drained and rinsed
¼ teaspoon onion powder
¼ teaspoon chili powder
¼ teaspoon cumin
1 jalapeño pepper, diced (optional and HOT)
6-8 whole-wheat tortillas
DIRECTIONS:
-Preheat oven to 375º F. Prepare a sheet pan with parchment paper.
-An hour before you plan to eat, peel and quarter the sweet potatoes.
-Bake sweet potatoes in the oven for 45 minutes to one hour, until soft.
-In the meantime, prepare rice in a rice cooker or on stove top as directed.
-Remove sweet potatoes from oven and toss into a mixing bowl. Mash sweet potatoes with the salsa, rice and fresh spinach.
-Place sweet potato mash in a sauce pan and mix in black beans and refried beans, heating mixture thoroughly over medium heat. Add onion powder, chili powder and cumin to taste and stir.
-Place a tortilla in a frying pan on medium heat, and slather the side facing up with sweet potato and bean mixture. Add jalapeños if desired.
-Place another whole wheat tortilla on top. Press down on top tortilla with spatula with pan on medium heat for about 3 minutes. Flip with spatula and cook for another three minutes.
-Voila! Cut into desired number of sections. Serve topped with salsa.
Tip: Also try this with black-eyed peas instead of the black beans or any other favorite beans.

Walk In The Word Tour of Israel 2013. I had a fantastic time with this tour and would not hesitate to encourage anyone interested to go on a future tour with James MacDonald and the whole crew. Please enjoy this “daily video blog” of the tour in order as it unfolded. There was so much to see and it was difficult to edit down to this length all that we experienced. Much was left on the cutting room floor! My daughter and I as well as my sister in law and her husband enjoyed the Purple Bus experience with Ronny Simon as our guide. His deep biblical knowledge and life experience made the tour very interesting and helped me to understand the “WHY” behind the history and current events of Israel.
